Are you looking for a healthy option for a banana muffin?

This is a healthier version of the one I have under my bread tab.

I made this for my Kiddo this morning.

Ingredients

4 well ripened bananas

3/4 c raw sugar

1/4 c olive oil

1 egg

1 tsp vanilla

2 c wheat flour

1 tsp baking soda

1 dash salt

1 1/2 Tbsp flax-seed/ground

walnuts (optional)

Directions

Pre-heat oven to 325 degrees F and either line or grease your muffin tins.

Cream together bananas, sugar, egg, olive oil, and vanilla. Sift flour, baking soda, flax-seed, and salt together then add to bananas. Stir in walnuts before adding to muffin tins.

Bake for 25 minutes or until done.
